Recipe: Vanilla-Milk Ice Cubes

Turn vanilla-flavored milk into ice cubes and let them infuse into your hot coffee as they melt.  For a different flavor, try this with coconut milk!

Makes: about 2 dozen ice cubes
2 cups milk
1 vanilla bean, split

1. Put the milk in a medium bowl or pitcher. Scrape the vanilla bean seeds into the milk using the tip of a sharp knife; whisk until combined.

2. Divide the milk mixture among two ice cube trays. Freeze at least three hours or overnight. 

3.  Enjoy in your next cup of coffee!

Recipe: Coffee Cake with White Chocolate Mocha Icing

As we always say, we love cooking with coffee.  (We really love drinking it, of course!)

When we came across this recipe, we had to share.

Here is the recipe:


  • 1 box French Vanilla Cake Mix, or other vanilla or white cake mix
  • 1/4 cup ground coffee of your choice
  • 1/2 cup shortening
  • 1/2 stick unsweetened butter, softened
  • 2 tablespoons White Chocolate Creamer
  • 1-2 tablespoons milk, optional

Instructions for Cake

  1. Set oven to bake at 350 degrees.  If making cupcakes, insert baking cups in pan.  For cake, grease cake pans.
  2. In a large bowl, follow directions on box for cake mix.  Stir in coffee grinds.
  3. Pour batter into cake pan or baking cups.
  4. Bake for 15-20 minutes or until toothpick comes out clean when inserted in center of cake.


1. In a large bowl, mix shortening, butter and creamer with an electric mixer until creamy.

2. Add in milk if too thick.

Green Coffee Bean Hype

We know that drinkinggreen_coffee_beans_image  coffee can have health benefits, but the trend of unroasted coffee beans for weight loss may not hold the same promise. In a new study with mice, scientists
in Australia showed that the extract didn’t have any effect on body fat, but it did have a harmful impact on the mice’s insulin resistance. The group of mice  eating the green beans extract gained the same amount of weight as the control  group, but this group also was not processing insulin, which led to higher  amounts of sugar in their blood, a sign of diabetes. It is only one study so  far, but it does suggest that more research is needed before anyone can  responsibly say it has benefits.
