From plant botany to coffee extraction systems to espresso machines and grinders to recipes and tastings, students learn the world of coffee and the world of Lavazza.

The Coffee Design unit focuses on food design as applied to coffee. Talk about innovation – this entire field didn’t even exist until just a few years ago. The Coffee Design lab experiments and creates with espresso-based beverages. Think new flavor pairings, syrups, milk textures and experimental preparation and serving devices. The team in this lab supplies food and 2015_Lavazza coffee popsbeverages for the restaurant/bakery/wine cellar and two coffee shops run by Lavazza. Perhaps you recall the cookie cup we wrote about earlier this year. That was a product of the Coffee Design lab. We have them in 4 espresso roasts:

Barista capsules have an intensity of 8 (out of 10) with cocoa notes, dense crema and a smooth mouth feel.

Artigiano capsules are 7 on the intensity scale. This complex roast has subtle notes of fruit and nut.

Ristretto capsules are 10 on the intensity scale, so expect full and intense flavors, including fruit and spice along with sweet notes. Perfect for making a short-shot (ristretto), of course.

Indian Sundara capsules are 7 on the intensity scale. This single-origin coffee is grown in India, giving the coffee a smooth taste, toasted and spicy notes and low acid.

Bristot – Started as a small roaster in 1919, this company expertly chooses the best beans, roasting them in ways that best showcase their natural flavors. At Bristot, quality is their cornerstone and their ongoing mission. Try the mild Tiziano, with fruity and chocolate notes. Classico offers espresso with powerful flavor and strong crema.

Hausbrandt – Although the founder of the brand was Austrian, he opened a coffee roasting business in Trieste. A merchant marine, he is known for his innovation with transport and storage of coffee to keep it fresh. We have ground coffee for the moka pot, including Moka with its light and mildly sweet taste; Espresso, which is 100% Arabica with a medium body; Gourmet is spicy, with citrus and slightly sweet notes; Gourmet Columbus is one of Hausbrandt’s premium blends, with a delicate and balanced flavor.

Pellini – Quality is the utmost priority for Pellini. From their quality control to a tasters’ panel to Kosher certification, Pellini offers some of the best Italian coffee you will ever taste.
