When chocolate first appeared in Europe in the 18th century, it was a status symbol and enjoyed by the nobility, originally in Spain. You would buy cocoa at a coffee cafe or Chocolate House, though it was seen by some as dangerous or even addictive.

In France, chocolate was such a delight, it was served in the royal palace of Versailles. A doctor of the time declared it was the “food of the gods, rather than ambrosia or nectar.” Favored courtiers were invited to the chocolat du Regent – a breakfast of chocolate with the Regent (who was the under-age king’s uncle, since the heir to the throne Louis XV was only 5 years old when his father died; the Regent handled affairs until the child was old enough).

The preparations of chocolate for drinking were also different around the world. The Spanish put vanilla and sugar in water with cocoa; the English get the credit for adding milk to the recipe; the French used cocoa, vanilla, sugar and cinnamon.
