You’ve just finished a late meal with good friends and family when coffee is brought to the table. Are you the person who is first to get a cup? Or maybe you’re the person who wouldn’t think of drinking even a sip of coffee in the evening for fear of being awake all night? Do you know someone who can drink a cup of coffee and then go to bed and sleep like a baby?
Well, it turns out that we each have our own sensitivity to caffeine, according to a new report published this month by the Institute for Scientific Information on Coffee. The report used existing research to study the way caffeine is metabolized, that is processed, by the body. Per the author, an individual’s response to caffeine is likely driven by 2 genetic factors: the speed of the liver metabolizing caffeine, and a genetic variant that makes the nervous system more sensitive to caffeine. The author, a physician, categorized three levels of caffeine sensitivity: High, Regular and Low. For those with livers that metabolize caffeine more slowly, and when caffeine binds strongly in the nervous system, even a small amount of caffeine can cause sleep problems; these people have high sensitivity. Low sensitivity to caffeine means you metabolize caffeine quickly, and you can probably drink coffee close to bedtime. For those with regular sensitivity to caffeine, you can drink 2-5 cups of coffee during the day without any issues then or at night. Some of that group may even be able to drink coffee in the evening.
So how we react to coffee is part of our genetic make-up, just like the color of our hair and eyes. A few other factors affect how you metabolize caffeine, which we listed below.

Factors Affecting Caffeine Metabolism
From the Institute for Scientific Information on Coffee, there are various factors which influence how the body handles caffeine. Besides genetics, some liver diseases, some prescription medicines, dietary factors, alcohol and smoking affect the speed at which you metabolize caffeine.

Army Proposes Safe Caffeine Doses
A study from the Army Medical Research and Material Command in Maryland has developed an algorithm to determine when and how much caffeine an individual should consume. The research claims that the tool can help improve alertness by up to 64 percent while still consuming the same total amount of caffeine. Alertness was defined as reaction time. Researchers used sleep/wake times along with the person’s maximum allowed caffeine to produce the optimum caffeine dose schedule.
As always, enjoy better coffee and thanks from the EnjoyBetterCoffee Team!
