Coffee first came to France in the 1600’s with an Ottoman ambassador to the court of King Louis XIV. The diplomat brought sacks of coffee described as a magical beverage, and mixed in small amounts of cloves, cardamom and sugar to serve. The ambassador also introduced all the accoutrements for drinking coffee: china dishes, embroidered napkins and, of course, a pot in which to create the magic.

Within a couple years, a coffee-drinking booth was opened under a tent at a festival, with Turkish waiters selling the coffee from cups on trays as they wandered through the crowd. The earliest Parisian coffee houses began to pop-up around town.

The Café de Procope opened in 1686, and the owner added coffee to the menu soon after.

This brought in many patrons, including French actors, authors and musicians. (The same café in the next century would be fundamental in the debate over the French Revolution.)

In the early 1700’s, Louis XIV received a coffee tree from the Dutch (another great coffee bastion) to install in the Royal Garden. Eventually, by the mid-1800’s, there were more than 3000 cafes in Paris. By that time, the first percolating coffee maker had been invented, and soon after a maker that used extraction pressure was introduced – and yes, it was the precursor of the espresso machine that debuted the next century.

The end of November is a special time around the world. In France, the end of the month brings the opening of the “marchés de Noel” (Christmas markets).

As you may already know, that night children place their shoes (or maybe a special St. Nick boot) near the door or by the chimney before retiring to bed. The French also celebrate with “le Père Noël” (Father Christmas) on December 25th.
