More About JJ Darboven

Johann J. Darboven founded a company in 1866 in Hamburg, Germany. As an innovator, he pioneered delivering roasted coffee in bags to his customers. Within a few years, he earned recognition for his 100+ varieties of coffee at an international horticultural exhibition. A generation later, his sons successfully marketed a coffee under the brand name IDEE (Idea). IDEE was (and still is) produced with a special refining process developed by the Hygienic Institute in Hamburg. The beans are treated to reduce irritants and bitter flavors while preserving the taste, and the caffeine of the coffee. The coffee was (and still is) extremely popular in Germany, and is today J.J.Darboven’s flagship product. The 1930’s found the company expanding into catering, then later into other countries. During the 60’s, one of the earliest coffee commercials shown on TV was for IDEE Kaffee. During the last few decades, J.J.Darboven has grown to include the brands described above. The company is still run by a fourth generation Darboven.

Rare Beans and An Exotic Formula Jack Up Coffee Prices at Some Cafes

In New York City, coffee shops abound. But at a Michelin-starred restaurant on Madison Park, that cup of coffee will cost $24. The restaurant’s coffee director will prepare the coffee tableside, using a dripper brewer (think amped-up Chemex coffee maker), all while timing the 3 stages of preparation carefully. The coffee used is a rare variety of beans from Colombia, and is described as having a creamy texture like dough or yogurt. The flavor is compared to blueberry pie. Another café we mentioned in a previous newsletter uses a machine that costs over $13k to prepare the $18 cup of coffee. Yet another coffee importer sells varieties of beans that are a steal at $100 a pound. We say OUCH! Interested in trying one or more of these trends? You’ll need this easy recipe for making cold-brew coffee. And maybe you will just create your own coffee trend!

How to Cold Brew:

1. Use a medium to coarse grind of coffee. Place the grounds in the bottom of a non-reactive container. Add cold water, using a 1:4 parts coffee-to-water ratio. Stir gently to combine.

2. Cover, then allow mixture to steep for 18-24 hours, either in or out of the refrigerator.

3. Strain the brewed coffee into a container to remove the grounds; it may take a few passes using paper towels, muslin or even a coffee machine filter. (If it remains cloudy, try using a larger grind next time.)

4. To make a coffee drink, try 1:1 parts coffee to water. You may have to adjust the ratio, up to 1:8 parts coffee to water, to get the flavor you like.

5. The concentrate should be stored in the refrigerator in a covered container.
